Produced by Rafael Amaya at Finca La Virginia. This coffee is harvested by hand following a strict ripeness criteria, cherries were fermented for 40 hours in an anaerobic environment. Then the cherries were pulped, gently washed, and sundried until ideal moisture content was achieved.
Rafael Amaya’s farm is located in Timana, Huila. 18km away from Pitalito, where most of the best coffees and microlots from Colombia are produced. Rafael has been growing coffee for 20 years but has only been in specialty coffee since 2015. He has experimented with fermentation, and tends to ferment between 130-180 hours. He determines when to stop by trying the mucilage attached to the coffee. He says “when the mucilage tastes like overripe orange it’s just the time to stop. This usually happens 20 hours after it tastes like passion fruit.” This micro-lot is 100% Pink Bourbon. This varietal is currently under research in order to determine its origin. It is said that it is a mutation that took place at 2100 m.a.s.l in San Adolfo, Huila.
